The elegant and persistent bubbles from the Leyda Valley are part of Ema’s personality, Santa Ema’s first sparkling wine. Ema is a fresh Extra Brut with a big, unique personality.
The cool, coastal climate in the Leyda Valley helps for a slow ripening of the grapes. The vines are planted on smooth rolling hills that directly face the sea, receiving all of the freshness and complexity from the Pacific’s ocean breezes, enhancing the complex, fresh, and intense aromas.
Ema is 80% Chardonnay and 20% Pinot Noir. Both varieties are hand-harvested during the first half of March, and bunches undergo a rigorous selection.
Limited production of 2,800 750 mL bottles.
The base wine is made by pressing whole clusters, and the must fermented at a low temperature of 14ºC for 20 days.
The second fermentation takes place in the bottle, using the Traditional Method, and the wine then ages for 18 months on its lees.
